White Russian cake with LiV Vodka and Kahlúa bottles

Mrs. Ferment’s Semi-homemade White Russian Cake

Fervere and I were recently invited to a friend’s house for a movie night. where they were showing **The Big Lebowski**. I wanted to bring a desert, and was inspired to make a White Russian-flavored cake in honor of [The Dude][1]. We already had a white cake mix in the pantry, so I started with that for convenience sake.

Mrs. Ferment’s Semi-homemade White Russian Cake


  • 1 box white cake mix prepared according to box directions
  • ¼ cup vodka, unflavored
  • 1 Tbs instant coffee
  • 1 cup sugar
  • 3 egg whites
  • 1 tsp cream of tartar
  • 18 Tbs butter, unsalted (2 sticks plus 2 tablespoons)
  • ¾ tsp vanilla extract
  • ¾ cup **Kahlúa**, or other coffee-flavored liqueur

Cake Directions

  1. Make the cake mix according to box directions and pour into 2 8-inch round cake pans.
  2. Bake at recommended directions and cool.
  3. Cut rounded tops off each cake to level.
  4. Combine vodka and instant coffee in a cup, mix until thoroughly dissolved, and brush onto cut sides of each cake with silicon basting brush, to flavor cake, not saturate it.

Frosting Directions

  1. Whip egg whites with sugar and cream of tartar until stiff and glossy.
  2. Add butter, one tablespoon at a time. The eggs may separate a bit, but continue to whip until combined.
  3. When fully combined add vanilla extract, and add coffee liqueur one tablespoon at a time until frosting has desired taste.
  4. Place one cake with cut-side up on cake plate and add small amount of frosting to cut side, smoothing frosting out to edges, then place second cake on top, cut-side down.
  5. Frost the cake with remaining frosting.
  6. Chill cake in refrigerator to stiffen frosting.

It turned out pretty well, despite my inability to ice a cake with any panache. It really did taste like a White Russian, and everyone seemed to like it, judging by the crumbs that remained by the end of the night. This is definitely an adult dessert, though, so use this recipe wisely.
